Fancy Potato

I got this recipe out of a Martha Stewart magazine. They are easy to make and look fancy if you need them for a formal dinner setting.

I don't have the recipe since I accidentally threw away my magazine, but the general directions are to take your potato and peal the skin from the top horizontal half. Then thinly slice the pealed half down to where the peal starts (hopefully the picture shows how it is done). Brush with olive oil and season with salt and pepper. Bake as you would a baked potato, but check it at 45 minutes since it really won't take as long as a baked potato to cook.

Has anyone else made these and have suggestions?
