Wedding Fun

 
Our niece, Hannah, got married last month to Phil. We were able to celebrate with them and had an enjoyable time. We wish them every happiness!
 Benjamin played the part of cuteness and had fun being doted on.
Benjamin's closest cousin (in age) is Vera. They got to spend a few moments together, but they were always on the move. I caught the blurry shot above, and below is Corinne's picture of them running around. We're glad we got to spend time with them and look forward to seeing them in late spring.

Waffle Loves Valentines Flowers and a Movie

On Valentine's Day, Benjamin and I delivered some Valentines and then met up with my sister-in-law, Lan. We had a great time going over to Thanksgiving Point to get a Waffle Love treat. The biscoff waffles are very tastey! Benjamin and I had a tug-of-war with the waffle we shared.

When we arrived home from our outing, we found flowers had been delivered for me from Mike. They're still blooming and make the house smell pretty. Benjamin and I got Mike an oreo ice-cream cake, which didn't last very long.

Mike and I went out (without Benjamin) on a date to dinner and a movie, The Monuments Men. It's the forth movie I've been to in the theatre since Benjamin was born. What a treat!

Simple Yellow Cake With Chocolate Frosting

 




I asked Mike what kind of cake he wanted for his birthday and he answered yellow cake with chocolate frosting. I opted to make everything from scratch. I liked the way the cake turned out. It's more dense than a box cake. Usually, cake from scratch also turns out a bit drier, but this cake was moist for my taste. Also, I found an amazing chocolate frosting recipe. I found these recipes on allrecipes.com.

Yellow Cake

1 c butter
2 c sugar
4 eggs
2 1/2 c self-rising flour
1 c milk
1 T vanilla

Preheat oven to 350 degrees F. Grease and flour a bunt cake pan. In a medium bowl, cream together the butter and sugar. Beat in the eggs, one at a time. Combine the milk and vanilla, add alternately to the creamed mixture with the flour, ending with the flour. Mix only as much as necessary. Pour into the prepared pan. Bake for 35 to 40 minutes.

Sour Cream Chocolate Frosting

1 cup semisweet chocolate chip 
4 tablespoons butter 
1/2 cup sour cream 
1 teaspoon vanilla extract 
1/4 teaspoon salt  
2 1/4 cups confectioners' sugar

Melt chocolate chips and butter in small sauce pan. Beat into sour cream and vanilla. Add salt and gradually mix in sugar.
